It’s best to go with a processor that compliments it, but at the same time, it’s not advisable to spend too much on it. As a thumb rule, the CPU should be cheaper than the graphics card, at least in gaming builds. The average enthusiast will tell you to go for the Ryzen 7 3700X, but for gaming, the Core i7-9700K is the better choice and in India, the prices are also pretty much the same. The latter can be overclocked to yield almost identical performance to the Intel Core i9-9900K, notably better than even the Ryzen 9 3900X. As the Ryzen chips don’t exactly boost that well, it’s pointless to overclock them, especially a 65W unit. I suggest staying away from the i9 as the delta is not noticeable and after overclocking, both CPUs produce the same frame rates in most games. For gaming at 100+ FPS, at 1080p or 1440p, the Core i7 is the recommended option as it consistently beats the 3rd Gen Ryzen chips. However, if you are looking to build a PC not just for gaming but for a variety of other tasks including rendering, video editing or CAD, then the Ryzen 7 3700X is the better option.
